Truffles

I attempted to make truffles for the first time a few weeks ago and it did not turn out well. Actually, there is still truffle mixture sitting in my fridge!

I was using a recipe one of my friends gave me a few years ago and only just remembered I had it when I saw a Pinterest post about making truffles.

When I started making the truffles, I didn't have a lot of time but the recipe said the mixture had to cool for "at least two hours." I thought leaving it in the refrigerator for longer then two hours wouldn't be an issue, but when I returned and tried scoop the truffle balls it bent my spoon... So I put it back into the refrigerator to try again another day.

Even though the mixture has been sitting in my fridge for weeks, I still think I can do it and they will be delicious! My belief is: If I take the truffle mixture out now and let it sit outside the refrigerator for awhile, it may become malleable enough for me to continue on with the recipe and form those truffle balls we all know and love.

My Goal of Summer 2015

Greetings!

My name is Abby and I am currently an undergraduate student at the University of Vermont (UVM).

UVM is located in the charming city of Burlington, Vermont. Living in a rural Vermont all my life, going to UVM seem like the next best step. In Burlington there is always something to do and that's why I love it there. But after finishing my first year, going back home seemed dull in comparison.

I had very few plans for the summer and I knew I would be working full-time so I would be stuck at home. So I had an idea... Make a bunch of food that I've been pinning on my Pinterest!

"Pinterest is a visual discovery tool that you can use to find ideas for all your projects and interests." I use my Pinterest account for arts and crafts and DIYs, makeup tutorials, workouts, helpful daily tips and of course, recipes.

Being an all around "foodie", aka: eating food, cooking food and being around food, college sucked! I could barely make any food in the "kitchen" in my dorm and the food in the dinning halls left an unsavory taste in your mouth... One time I tried to make Pillsbury chocolate chip cookies and I had to use a questioning working oven, a donated baking sheet, a washcloth as an oven mitt and plastic plates as cooling racks... You can imagine I never tried to cook anything in the dorm kitchen again... So being back home seemed like the only opportunity to make all the delicious recipes I was pinning on my Pinterest board! Therefore,

My goal for this summer is to cook all the recipes I have pinned on my Pinterest account.

Grilled Cilantro-Lime Sweet Potatoes

May 11th

With my whole family in town I decided to try out this Pinterest recipe for sweet potato fries. Coming up with the idea on the spot, I didn't have a lot of time to cook the sweet potatoes and I was low of ingredients. It was also raining so I couldn't give them those nice grill marks. I also decided to cook more than three potatoes, which is what the recipe called for. What a big mistake.
I made two sheet pans full. Dinner had already started when the sweet potatoes came out of the oven, so not many people had the appetite to try them. When I finally tried one I thought they were great! The cayenne pepper gave them an amazing kick but unfortunately not boiling the sweet potatoes completely and being unable to grill them made them a little eh...


I'd like to try to make these sweet potato fries again but following the recipe more accurately.
